Jenny’s Journal: Camping Connoisseur

While my original intent for Jenny’s Journal had been to relay what great suburban food finds I can unearth (in hopes that the phrase is not an oxymoron)… last weekend we went camping…

Not very serious camping, though. Car-camping, so after a day hike we could enjoy time at the base camp, with great food and wine. 

My husband I were assigned breakfasts, with much input given as to how much bacon was devoured last year. Food for 11. What to do for breakfast, when there’s no place to plug in the waffle iron? We landed upon these menus, and stocked up appropriately:

Breakfast Day 1 -
Coffee (with a little cinnamon to taste)
Fruit salad (cantaloupe, watermelon, pineapple – all freshly cut just before the meal – and grapes)
Pancakes with fresh blueberries and Canadian maple syrup
Bacon ( I personally don’t understand how this crowd can consume so many pounds of pork fat so quickly…) 

Breakfast Day 2 -
Coffee (with a little cinnamon to taste)
Fruit salad (again)
Omelets, el rancho (freshly ground black pepper, red crushed pepper; dash of oregano, salsa and sharp cheddar cheese)
Bagels
Canadian bacon

Yup. We purchased 8 lbs of bacon, and another 3 lbs of Canadian bacon – I most certainly was not going to disappoint all these pork eaters! (Have I mentioned, I don’t actually eat meat?)

So all went swimmingly with our breakfasts — nice hot (strong) coffee; fresh succulent fruit salad; pancakes that were big and fluffy and creatively shaped… and thank goodness there was a well-stocked camping supply store at the check-in…. Because, of course, the one thing that was left behind when we packed? The pounds and pounds of bacon.
