This is a great fall cookie recipe – with molasses, cinnamon and ginger, it will leave an amazing spice-filled aroma in your house. The secret to these cookies (other than the frosting)? Be sure to make your dough a day ahead and let chill overnight.

1.Mix sugar, and molasses in hot water.
2.Stir in melted shortening.
3.Sift together dry ingredients in a large bowl.
4.Add the sugar and molasses mix into the dry ingredients. Thoroughly mix.
5.Divide dough into two.
6.Chill overnight.
7.Roll out 1/4-inch thick on floured surface.
8.Cut into round cookies (a drinking glass works well as a cutter).
9.Bake at 375° for 8-10 minutes on greased cookie sheet.
10.Mix icing ingredients together.
11.Frost cookies with lemon icing once they have cooled.
