Molasses Cookies
Ingredients
- 1 cup sugar
- 1 1/2 cups dark molasses
- 1 cup hot water
- 1 cup melted shortening
- 7 cups sifted flour
- 5 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon fine sea salt
- 1 teaspoon organic ground cinnamon
- 1 teaspoon organic ground ginger
Directions
- mix sugar, and molasses in hot water
- stir in melted shortening
- sift together dry ingredients
- mix liquid into dry
- Divide dough into two
- chill overnight
- roll out 1/4 inch thick on floured surface
- cut into round cookies (we always used a drinking glass as the cutter)
- bake at 375 for 8-10 minutes on greased cookie sheet
- frost with lemon icing
