Molasses Cookies with Zesty Lemon Icing

This is a great fall cookie recipe – with molasses, cinnamon and ginger, it will leave an amazing spice-filled aroma in your house. The secret to these cookies (other than the frosting)? Be sure to make your dough a day ahead and let chill overnight.

Instructions

  • 1.Mix sugar, and molasses in hot water.
  • 2.Stir in melted shortening.
  • 3.Sift together dry ingredients in a large bowl.
  • 4.Add the sugar and molasses mix into the dry ingredients. Thoroughly mix.
  • 5.Divide dough into two.
  • 6.Chill overnight.
  • 7.Roll out 1/4-inch thick on floured surface.
  • 8.Cut into round cookies (a drinking glass works well as a cutter).
  • 9.Bake at 375° for 8-10 minutes on greased cookie sheet.
  • 10.Mix icing ingredients together.
  • 11.Frost cookies with lemon icing once they have cooled.

Cookie Ingredients

  • 1 cup sugar
  • 1-1/2 cups dark molasses
  • 1 cup hot water
  • 1 cup melted shortening (butter)
  • 7 cups sifted flour
  • 5 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon fine sea salt
  • 1 teaspoon organic ground cinnamon
  • 1 teaspoon organic ground ginger

Zesty Lemon Icing Ingredients

  • 1/2 cup butter
  • 1/2 pound confectionery sugar (about 2 cups)
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons fresh lemon juice
