Mr. Passi’s Pumpkin Pancakes

It’s a challenge to get in the recommended amount of vegetables each day. So if you can knock one off at breakfast, you’re on your way! My older kids made this in Chris Passi’s first grade, and it has been a popular item with kids and adults ever since.

Quote from Pepper, age 6, to Kysen, age 4: “Wait until you get in Mr. Passi’s class. He will never yell at you. And when you look up, you will see his smiling face.”

Ingredients:

  • I cup boiling water
  • ½ cup cornmeal
  • 1 cup milk
  • ½ cup canned pumpkin
  • 1 egg
  • 1 cup flour
  • 1 tablespoon sugar
  • 2 and ½ teaspoons baking powder
  • 1 teaspoon organic ground cinnamon

Directions:

  1. Add boiling water to cornmeal. Let stand 5 minutes.
  2. Stir in milk, pumpkin and egg.
  3. Mix in flour and sugar.
  4. Heat up griddle or pan with butter.
  5. Pour batter, cook and flip.
  6. Serve with real maple syrup, of course! (Trader Joe’s has the best price I know of)

Today we made pumpkin pancakes. They tasted _______.

Draw a picture of what your face looked like when you made the pancakes.
