6- 8 apples, peeled, cored and sliced
6 Tablespoons butter
3 Tablespoons sugar
1/2 teaspoon fine sea salt
1 cup bourbon
1 egg white, lightly beaten
1 Tablespoon Smith & Truslow
Apple Pie Spice Blend
1 pie shell, with top (frozen, or your favorite home made crust)
Preheat oven to 425F. Melt butter over medium heat in large saucepan. Add sugar, salt and Smith & Truslow Apple Pie Spice. Add apples and cook
for 5-10 minutes. Add bourbon, and cook for 10 more minutes until liquid is reduced and thickened. Squeeze lemon into mixture and allow to cool.
Pour filling into prepared pie shell. Cut shell top into strips and criss-cross for lattice top. Brush top with egg yolk.
Bake at 350F and bake with foil for 40 minutes.
Remove foil and bake additional 10-20 minutes, until top is golden brown.
