Slice & Bake Ginger Spice Cookies

Makes 5 Dozen


1 cup butter

2/3 cup molasses

2/3 cup brown sugar

2 eggs

1 teaspoon vanilla extract

2-1/4 cups oatmeal

2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

3 Tablespoons Smith & Truslow

Ginger Spice Blend

Cream butter and brown sugar until light and fluffy. Add eggs and beat for 4 minutes. Add molasses and vanilla extract. Mix well. Pulse oatmeal in a food processor to create oat flour. In a bowl, mix together flour, oat flour, baking soda, baking powder and Smith & Truslow Ginger Spice Blend. Stir flour mixture into egg and sugar mixture until blended ... do not over-mix when you add the flour. Form into two logs. Wrap with tin foil and freeze.
To bake, remove from freezer, slice into 1/4-inch slices, place on cookie sheet and bake in a 360F oven for 6 - 8 minutes.
