1.Toast bread in large baking pan or cookie sheet, turning once, until dry (25-30 minutes).
2.In a large skillet over moderately low heat, sauté onions, celery, and dried herbs in butter. Stir occasionally, until celery is softened (10-15 minutes).
3.In large bowl, toss bread, vegetables, broth, water, egg, and salt and pepper to taste.
4.Cool, uncovered. Stuff bird, or save to reheat later in covered casserole at 325°F.
